Jede Auberginenscheibe gro\u00dfz\u00fcgig mit Pflanzen\u00f6l bepinseln und in einer Schicht auf ein Backblech legen. In den niedrigen Regalen im Ofen 10 Minuten legen, dann umdrehen und goldbraun backen. Den Ofen auf 180 \u00b0 C reduzieren.<\/div>\n<div class=\"\"><\/div>\n<div class=\"\">Kokos\u00f6l in einem Wok erhitzen und die Zwiebeln dazugeben. Decke und schwitze alles bei schwacher Hitze etwa 5 Minuten lang, bis alles weich wird. F\u00fcge den Knoblauch, Senfk\u00f6rner, Bockshornkleesamen, Garam Masala, Chilipulver, Zimtstange, K\u00fcmmel und gemahlenen Koriander hinzu. Koche alles einige Sekunden, bis es sch\u00f6n und aromatisch zu riechen beginnt.<\/div>\n<div class=\"\"><\/div>\n<div class=\"\">Die gehackten Tomaten und Kokosmilch in die gew\u00fcrzten Zwiebeln gie\u00dfen und gut umr\u00fchren. \u00dcberpr\u00fcfe die Gew\u00fcrze und f\u00fcge etwas Zucker, Salz oder Pfeffer hinzu.<\/div>\n<div class=\"\"><\/div>\n<div class=\"\">L\u00f6ffle ein Drittel der Tomatensauce auf den Boden einer 2-Liter-Auflaufform hinein. Die H\u00e4lfte der Auberginenscheiben darauf legen. L\u00f6ffle ein weiteres Drittel Tomatensauce und dann die restlichen Auberginenscheiben mit dem Rest der Sauce ab. Streue \u00fcber die Mandelbl\u00e4ttchen den Koriander (optional) und backe alles 25-30 Minuten. Schalte die mittlere Hitze ein. Wenn das \u00d6l hei\u00df ist, f\u00fcge die abgetropften und getrockneten Artischockenherzen hinzu. Auf allen Seiten goldbraun kochen lassen. Entferne das \u00d6l und lege es auf ein Papiertuch, um \u00fcbersch\u00fcssiges \u00d6l aufzunehmen. Mit Salz und Pfeffer leicht w\u00fcrzen.<\/div>\n<div class=\"\"><\/div>\n<div class=\"\">W\u00e4hrend Pasta und Artischocken kochen, gib bei mittlerer Hitze 2 Essl\u00f6ffel vegane Butter in eine sautierte Pfanne. Wenn die Butter geschmolzen ist, Zwiebel, Zitronensaft und Knoblauch dazugeben und mit Salz und Pfeffer w\u00fcrzen. Koche alles einige Minuten, bis die Zwiebeln weich werden. F\u00fcge den Wein hinzu und koche sie ein paar Minuten weiter.
